WHAT IS RAW HONEY?
While raw honey does not have an "official" definition, most people consider raw honey to be unheated and unfiltered. This preserves that absolute best of the honey's original flavor.
WHAT DOES "LOCAL HONEY" MEAN?
Local honey is often described as honey which is produced close to the end user, the customer. My honey is all produced from yards within about 10 miles of my home.
WHAT IS "BOUTIQUE HONEY"
I like to use the word "boutique honey" to describe my honey.
What do I mean by that? Honey, like wine, reflects the flavors associated with a specific time and place. Wine tasters used the word "terroir".
Each season, each location produces a very special mixture of nectars. These flavors make each batch unique. What I do is extract each of my yards in small batches. This eliminates blending a bunch of different locations into a homogeneous mix. By extracting separately, each location reflects a one of a kind taste of delicious, local, raw honey.
